Dissociation denotes reversible separation. Enzyme cleavage of lactose is irreversible. The earlier term 'cleaves' is correct, not 'dissociates'. Many good texts are available. Please study them.

Answers:

Here dissociation was used as general term to indicate the molecule breaks into 2 or more fragments.

Bond cleavage, or scission, is the splitting of chemical bonds. This can be generally referred to as dissociation when a molecule is cleaved into two or more fragments.

Molecule being cleaved into fragments...yes, when held by electrostatic forces, dissociation is an appropriate word. But covalent bond cleavage is not described correctly by dissociation.
